How to Green Curry at Home

Green Curry, or "Gaeng Keow Wan" in Thai, is a delicious and aromatic Thai curry. Here's a recipe for making Green Curry at home.

Green Curry

Ingredients:

1 lb (450g) chicken, beef, or tofu, cut into bite-sized pieces

2 cups coconut milk

2-3 tablespoons green curry paste (store-bought or homemade)

1 cup Thai eggplant, quartered (or regular eggplant cut into chunks)

1 cup bamboo shoots, sliced

1 red bell pepper, sliced

1 cup green beans, cut into 2-inch pieces

4 kaffir lime leaves, torn into pieces

2 tablespoons fish sauce

1 tablespoon soy sauce

1 tablespoon palm sugar or brown sugar

1 cup fresh Thai basil leaves

Sliced red chili for garnish (optional)

Cooked jasmine rice for serving

Green Curry Paste:

2-3 green Thai bird's eye chilies (adjust to taste)

2 shallots, peeled and chopped

4 cloves garlic, peeled

1 stalk lemongrass, sliced (use the bottom part)

1 thumb-sized piece of galangal, sliced

1 tablespoon chopped cilantro roots or stems

1 teaspoon ground coriander

1/2 teaspoon cumin

1/2 teaspoon white pepper

1/2 teaspoon shrimp paste (optional)

Zest of 1 lime

Instructions:

Green Curry Paste:

In a food processor, blend all the green curry paste ingredients until smooth. You may need to add a little water to help with the blending.

Green Curry:

1. In a large pan or wok, heat a couple of tablespoons of coconut milk over medium heat.

2. Add the green curry paste and stir-fry for 2-3 minutes until fragrant.

3. Add the chicken, beef, or tofu to the pan and cook until browned on all sides.

4. Pour in the remaining coconut milk and bring the mixture to a simmer.

5. Add Thai eggplant, bamboo shoots, red bell pepper, and green beans to the pan. Stir to combine.

6. Season the curry with fish sauce, soy sauce, and palm sugar. Adjust the seasoning to your taste.

7. Add kaffir lime leaves to the curry and simmer for 10-15 minutes until the vegetables are tender and the meat is cooked through.

8. Stir in fresh Thai basil leaves and cook for an additional 2 minutes.

9. Remove the kaffir lime leaves before serving.

10. Serve the Green Curry over cooked jasmine rice, garnished with sliced red chili if desired.
