Ingredients:
1 lb (450g) large shrimp, peeled and deveined
4 cups (1 liter) chicken or vegetable broth
2 stalks lemongrass, bruised and chopped into 2-inch pieces
4 kaffir lime leaves, torn into pieces
3-4 Thai bird's eye chilies, smashed (adjust to taste)
3 slices galangal (or ginger if unavailable)
200g (about 1 cup) mushrooms, sliced
1 medium tomato, cut into wedges
1 small onion, thinly sliced
2 tablespoons fish sauce
1 tablespoon soy sauce
1 tablespoon lime juice
1 teaspoon sugar
Fresh cilantro leaves for garnish
Optional: Thai chili paste or chili oil for extra heat
Instructions:
1. In a pot, bring the chicken or vegetable broth to a boil.
2. Add lemongrass, kaffir lime leaves, Thai bird's eye chilies, and galangal slices to the boiling broth. Simmer for about 5-10 minutes to infuse the flavors into the broth.
3. Add mushrooms, tomato, and onion to the pot. Cook until the vegetables are tender, about 5 minutes.
4. Add the shrimp to the pot and cook until they turn pink and opaque, about 3-5 minutes.
5. Season the soup with fish sauce, soy sauce, lime juice, and sugar. Adjust the seasoning to your taste, adding more fish sauce for saltiness, lime juice for acidity, or sugar to balance the flavors.
6. If you like it spicier, you can add Thai chili paste or chili oil at this point.
7. Remove the lemongrass, kaffir lime leaves, and galangal slices from the pot before serving.
8. Ladle the soup into bowls, making sure to distribute the shrimp and vegetables evenly.
9. Garnish with fresh cilantro leaves.
